Local food
- Kobe beef
Beef from Tajima cattle born in Hyogo Prefecture and certified by the Kobe Beef Marketing & Distribution Promotion Association. It is less than about 0.2% of the beef eaten in Japan, and shops and restaurants show a 10-digit ID number for each animal. How to tell the real thing: our Himeji Castle and Kobe beef guide.

A local dish of Akashi (Hyogo): octopus baked in a soft batter of flour, wheat starch, egg and dashi on a copper pan, then dipped in broth instead of sauce. Locals have long called it tamagoyaki, and the city had about 70 akashiyaki restaurants as of 2021.
